Easy Italian Grilled Chicken 

Stop what you are doing and add this Grilled Chicken Parmesan to your menu. OMG! This is the BEST chicken parm I’ve ever eaten! Herb and garlic chicken cooked on the grill and topped with marinara sauce, cheese, and a parmesan bread crumb topping. No frying! Cooking the chicken on the grill gives it tons of extra flavor and the parmesan crust really makes the dish. Whip up a salad and some garlic bread for a meal better than any restaurant!

How to Make Grilled Chicken Parmesan

This dish is super simple to make with only a few simple ingredients. Place chicken in a plastic storage bag and pour marinade over it. Let the chicken marinate in the refrigerator for at least 30 minutes. 

Remove the chicken from the marinade and cook on the grill until the chicken reaches an internal temperature of 165ºF.

In a small bowl, combine panko bread crumbs, garlic salt, parmesan cheese, and melted butter.

Place grilled chicken in an oven-safe casserole dish or rimmed baking sheet. Spread 2 tablespoons of marinara sauce on each breast. Top the sauce with mozzarella cheese. Sprinkle the parmesan crumb topping over the chicken. Place the chicken under the oven broiler and cook until the cheese melts and the crumb topping begins to turn light brown. Serve chicken over pasta and sauce. Garnish with fresh basil or parsley.

  • I use a bottle of Lawry’s Garlic & Herb Marinade to season the chicken.
    • Can substitute Italian dressing for the marinade.
    • Feel free to add extra seasonings – garlic powder, oregano, and Italian seasoning all work great!
  • To cook chicken without a grill, heat olive oil in a skillet over medium-high heat. Pan sear the chicken breasts on both sides for 3 to 4 minutes. Place chicken on a rimmed baking sheet. Bake at 400ºF for 10 minutes, until the chicken reaches an internal temperature of 165ºF.
    • Use an instant-read meat thermometer to check the chicken.
  • Our favorite store-bought spaghetti sauces are Trader Joe’s Roasted Garlic Marinara (green label), Rao’s, Carbone, and La Famiglia DelGrosso.
  • You can use regular mozzarella cheese or fresh mozzarella cheese.
  • For extra flavor, add a layer of basil pesto on top of the chicken. 
  • You can use shredded parmesan cheese, freshly grated parmesan cheese, or the parmesan cheese in the green can.
  • Add some red pepper flakes to the breadcrumb topping for a little kick.
  • Store leftovers in an airtight container in the refrigerator.

Grilled Chicken Parmesan Recipe – a delicious twist to an Italian classic. Herb and garlic grilled chicken topped with marinara sauce, mozzarella cheese, and a crispy parmesan breadcrumb crust. Ingredients:

Chicken

  • 4 boneless chicken breasts pounded to an even thickness
  • 1 (12-oz) bottle Lawry's Garlic & Herb marinade
  • ½ cup marinara sauce
  • 1 cup shredded mozzarella cheese

Parmesan Crumb Topping

  • ½ cup panko bread crumbs
  • 1 tsp garlic salt
  • cup shredded Parmesan cheese
  • 2 Tbso melted butter

Instructions:

  • Pour marinade over chicken. Let marinate in refrigerator for 30 minutes or overnight. Grill 12-15 minutes, until chicken is done.
  • In a small bowl, mix together panko bread crumbs, garlic salt, shredded Parmesan cheese, and melted butter.
  • In a medium saucepan heat spaghetti sauce over medium heat.
  • Position rack in center of oven. Preheat the oven broiler.
  • Transfer the cooked chicken to an oven-safe casserole dish or rimmed baking sheet.
  • Spread 2 tablespoons spaghetti sauce on each breast, then top with mozzarella and Parmesan crumb topping.
  • Place chicken under broiler and cook until cheese melts and crumb topping begins to turn light brown.  Serve chicken over pasta and sauce.
