Easy Skillet Cajun Pasta Recipe

This Smoked Sausage Cajun Alfredo is SO good! This was so good that we made it two days in a row! I’m still dreaming about it!! It reminded me a lot of our all-time favorite Chicken Lazone. There are only 5 ingredients in this dish, and it only took about 15 minutes from start to finish. I LOVE easy weeknight meals like this!

How to Make Smoked Sausage Cajun Alfredo

This pasta is super easy to make. Start with cooking some pasta. While the pasta is cooking, brown some smoked sausage in a skillet. Add heavy cream and Cajun seasoning; bring to a boil. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken. Remove from heat, stir in Parmesan cheese. Add pasta to the sauce and toss.

  • To cut down on the calories, I used turkey smoked sausage. It tasted great and we couldn’t tell any difference from the regular smoked sausage.

  • If you are worried about this being spicy, you can certainly reduce the amount of cajun seasoning.

  • Prepare pasta according to package directions; drain and set aside.
  • Saute sausage in a large skillet over medium-high heat for 5 minutes, turning occasionally.
  • Add cream and Cajun seasoning; bring to a boil. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken.
  • Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss.

Notes:

    1. I just made this tonight with beef smoked sausage. Really very good. I added a bit more cajun (season to taste) also, heavy cream comes to a boil and needs about 10 to 12 min on simmer to thicken. So a bit longer then 15 minutes but worth it. Easy, cheap weekday meal that will last for a couple of meals depending on how many people your feeding. Enjoy!

  2. I knew I was going to like this because you’ve had so many wonderful comments on it! But I wanted to write my own comment now and tell you that this recipe has been on rotation for me for over a year now! I use whatever pasta I have around (even gluten free pasta!), but campanelle is my favorite. I have used about any kind of sausage I have in the house – turkey kielbasa was surprisingly good. But a good Andouille sausage is the best. I have found that the pre-shredded parmesan clumps a little. It’s not a deal breaker and I will use it. But if I have time (and the energy) I do like to shred my own. I tend to use a little more Cajun spice than the recipe calls for – I just love that flavor! But all of these things are super minor changes because the recipe is so good.

    One thing I do pretty consistently is add more veggies. Just because I’m trying to eat more veggies. And I find this recipe is a perfect vehicle for so many different kinds! I have sauteed onions and pepper with the sausage; I have added frozen chopped broccoli to my pasta water while my pasta is cooking and added that; I’ve added fresh broccoli or brussels sprouts when I’ve sauteed the sausage and let it cook in the cream (I did end up having to add just a touch more cream); I’ve added peas to the cream while it simmered. The only thing I wouldn’t recommend is cauliflower. It just took over on taste.

    I have made this for so many people and they always request the recipe. It’s seriously good. And simple. And easy to adjust with what you have in the house. And easy to add veggies. And did I mention that it’s seriously good? Thank you!!!

  3. Let me start off by saying I don’t like alfredo…… BUT, this was the most awesome thing!!! When I saw the recipe, it just hit my “I think I want to try that” button. I used Sunnyvale Farms HOT smoked sausage and added an extra cup of cheese. (to me, recipes are suggestions 🙂 )
    It was SO GOOD!!! Definitely going in my stack of do-it-again recipes!

  9. Made this tonight! So so yummy. A new fave in the rotation. I only added about 1tsp of Cajun seasoning. I used Tony’s and 1 tbsp would have been super salty. I added some garlic, green onions, and tomatoes as well and it was perfect!

  10. I made this tonight and it is so very yummy! It did not thicken up at all for me so I added a corn starch slurry at the end. It has just the right amount of seasoning and has an amazing creaminess. This will definitely be something I make again.

    1. I followed your extra ingredients, plus added kale after I added the cream and Cajun spice. In addition to the smoked Turkey sausage, I added two diced checked breasts. This is my new favorite meal. With the extra ingredients it adds more flavor. Thank you for this recipe!!

  17. Made this tonight with Trader Joe’s andouille sausage. Tastes really good, although I nearly quadrupled the amount of the seasoning! If youre like me and love strong flavor and spice, I definitely recommend giving it another hearty spoonful or two of the seasoning.

  20. Any good ideas on how to reheat leftovers? My husband reheated the leftovers in the microwave at work, and the sauce separated. It looked like a big pool of grease. It was still yummy, he just avoided the grease.

    1. When I reheat cream based sauces, I add extra liquid and go low and slow on the stovetop so it doesn’t separate. It definitely takes more time, but is worth it.

  21. Love the simplicity of this recipe! I added some Johnny’s seasoning salt at the end since it wasn’t quite as flavorful as I wanted, but I used tofurky kielbasa so a good smoked sausage probably would have added that extra kick. It really separated something fierce when reheated but was still tasty. Overall I would make it again because it’s so EASY, but will add some red bell pepper and more seasoning next time 🙂

  22. I’m not a fan of Cajun anything. Being from ranching country in Canada I’m not used to flavouring foods with those spices.
    Can anyone recommend a substitute seasoning?

    1. Try some ranch or maybe once you have it good and hot some shredded cheddar omit parm or not. Or you couldcook some garlic and then add it. I would probably ad areg can of diced tomatoes to either mixture

    2. It’s your kitchen and no one will know what you do there!

      However, I’ll encourage you to try it the way it’s given. It’s not that hot and it is very tasty. Just because you’re from Canada doesn’t mean you can’t try new things!

    3. Someone commented that they used old bay, which is an east coast seafood style seasoning with good results. You want to find something with salt and flavors that compliment the type of sausage you are using. For example, Costco has a caprese chicken sausage that could be used with this, but I’d use Italian spices rather than cajun. Cajun or Andouille style sausage calls for the cajun spice mix.

    1. I haven’t, but you can certainly try it. You may need to add a little flour or cornstarch if the sauce doesn’t thicken.

  28. i used roger wood lumber jack spicy smoked sausage and added a lot of cayenne pepper powder, some additional paprika, and a little bit of tony chacheres (i don't think this one made a difference), because i wanted a spicy version of this, and it was great. i also used some more parmesan cheese, because i love parmesan cheese.

      1. I made this for dinner tonight with bowtie pasta. It made a perfect amount for my husband and me for dinner, plus enough for him to take for lunch tomorrow. It was different in a good way!
