Chick-fil-A Carrot & Raisin Salad

Does anyone else miss the Carrot Salad from Chick-fil-a? It was always a favorite side dish. I hated when they pulled it from the menu!! I came across a recipe for Carrot Salad in one of my cookbooks and decided to give it a try. OMG! SO good!! Carrots, raisins, pineapple, and coconut. I mean, what’s not to love?!?! Chicken Legs isn’t a carrot fan and was totally dreading tasting this dish. BUT One bite and he was a fan! He LOVED it! I knew he would.

How to Make Carrot & Raisin Salad with Pineapple and Coconut

This side dish is very easy to make. Grate some carrots and place them in a bowl. Add crushed pineapple, coconut, raisins, sugar, and mayonnaise. Mix everything together and refrigerate a few hours before serving.

  • I used a box grater to grate the carrots. I do not suggest using preshredded carrots in this reicpe. They are dry and hard. Freshly grated carrots taste much better!
  • This can be made in advance and refrigerated until you are ready to serve. I think it gets better as it sits in the fridge.
  • Is Carrot Salad gluten-free? Yes! All of the ingredients in the recipe are gluten-free.

  1. I’ve been making this salad for years. I like to add some dry orange Jell-O. It gives it sweetness, flavor & color. You can omit the coconut and sugar and it’s still delish! You can also “plump” the raisins in heated pineapple juice & then chop them. This is one of my favorite salads!

  2. This is a very good recipe! Great way to use carrots and add color to the meal! I added a pinch of nutmeg and cinnamon. This will be my quick go to side dish when I need veggies but a sweet kick!
Thank you for sharing this. Many friend and husband loved it!!

  3. Hi Steph, yum!!! going to make this today. Just wondering, do I drain the pineapple? It sounds so delish!! Hi to Jack, Squeaky and Fluff from Orange, Demon and Sweet!!!

  4. This is my hubby all time favorite salad! He likes me to switch it up a little bit!I use granny Smith apples instead of pineapples
