Tender chicken, smoked sausage, and black-eyed peas, all enveloped in a creamy and slightly spicy chicken and green chile sauce. The cornbread crust adds a sweet and savory contrast, that puts this dish over the top. ! This is hearty meal that’s perfect for warming up on a cold evening or at your upcoming New Year’s Day celebration. You gotta have those black eyed peas for good luck in the new year! How to Make Homemade Chicken Pot Pie

This dish is super easy to make with only a few simple ingredients. Bring a large pot of water to a boil over medium-high heat. Add frozen black eyed peas to the pot and cook until tender. Drain and set aside.

Heat olive oil in a large skillet over medium heat. Add smoked sausage and cook until brown. Don’t drain the excess grease. Add flour and white chicken chili seasoning to the pan. Cook, stirring constantly for one minute. Whisk in chicken broth and simmer on medium-low heat until the mixture has thickened. Remove from the heat and add diced green chiles, cooked sausage, and chopped cooked chicken. Stir well. Season with salt and black pepper to taste. Pour chicken pot pie filling into a 9×13-inch baking dish that has been sprayed with nonstick cooking spray.

In a large bowl, stir together Jiffy cornbread mix, cream-style corn, egg, and melted butter. Spread the cornbread mixture over the top of the chicken mixture. Bake in a preheated oven until the top crust is golden brown. Brush the baked cornbread with melted butter and garnish with cilantro, if desired.

Ingredients:

  • 1 (16-oz) package frozen black-eyed peas
  • 2 Tbsp olive oil
  • 1 -lb smoked sausage cut into 1/4” bite-size slices
  • 1 (4-oz) can diced green chiles undrained
  • ¼ cup all-purpose flour
  • 1 (1.25-oz) envelope white chicken chili seasoning mix
  • 3 cups unsalted chicken broth
  • 3 cups chopped cooked chicken
  • salt and pepper to taste

Cornbread Topping

  • 1 (8.5-oz) box Jiffy cornbread mix
  • 1 (14.75-oz) can cream-style corn
  • 1 large egg
  • 3 Tbsp melted butter

Instructions:

  • Cook peas according to package directions; drain. 
  • Preheat oven to 400°. Spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.
  • Heat olive oil in a Dutch oven over medium-high heat. Add smoked sausage and cook until lightly browned. Don’t drain the excess grease.
  • Add flour and seasoning mix; cook, stirring constantly, for 1 minute. 
  • Gradually add chicken broth, stirring to loosen bits from bottom of Dutch oven. Cook, stirring constantly, 3 minutes or until broth begins to thicken.
  • Stir in diced green chiles, black-eyed peas and chicken; bring to a boil.
  • Pour chicken mixture into the prepared baking dish.
  • In a bowl, mix together Jiffy mix, creamed corn, egg and melted butter. Spread cornbread topping over the top of the chicken mixture.
  • Bake for 35 to 40 minutes or until the crust is golden brown and cooked through.
