Creamy Tomato Bisque with Cheddar & Bacon

This Crack Tomato Soup is the ultimate creamy tomato soup recipe! It is effortless to make and is bursting with tons of great flavor! Creamy tomato soup loaded with cheddar, bacon, and ranch. All of my favorite foods rolled into one delicious dish. We ate this for dinner and had the leftovers for lunch the next day. All you need is some crusty bread and you have an amazing no-fuss weeknight meal!

What does CRACK mean?

If a recipe has “crack” in the title it means that the recipe has cheddar, bacon, and ranch in the ingredients. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck.

According to the dictionary, the definition of crack is “of superior excellence or ability”. We think the flavor combination of cheddar, bacon, and ranch fits this definition! This recipe is most definitely of superior excellence!

How to Make Crack Tomato Soup

This soup is super easy to make with only a few simple ingredients. In a Dutch oven or large saucepan, whisk together condensed tomato soup, chicken broth, crushed tomatoes and ranch dressing mix. Stir in cooked chopped bacon. Bring to a boil over medium-high heat. Reduce to medium heat and simmer for 15 to 20 minutes. Add heavy whipping cream and shredded cheddar cheese. Cook until the cheese has melted.

Helpful Tips & Frequently Asked Questions

  • Can substitute turkey bacon to reduce the calories.
    • I use precooked bacon pieces from Sam’s Club and Costco.
  • If you are sensitive to Ranch Dressing Mix, adjust the amount to your preference. Start with 1 or 2 tablespoons and add more after tasting the soup.
  • I suggest using low-sodium or no-salt chicken broth in this recipe.
  • DO NOT add any liquid to the canned tomato soup. Just use the condensed soup straight from the can.
  • Add a dash of red pepper flakes for a kick.
  • Feel free to add any vegetables to the soup that you enjoy. Fresh onion, celery, and carrots are good.
    • If adding vegetables, melt butter in the pot. Sauté veggies until soft and starting to turn golden brown. Add remaining ingredients as directed.
    • Use an immersion blender to blend the vegetables into the soup mixture for a smooth texture.
  • Can I make Crack Tomato Soup in the slow cooker? Yes! Add the soup, chicken broth, tomatoes, bacon, and ranch seasoning. Cover and cook on LOW for 6 hours. Add heavy cream and cheddar cheese. Cook on HIGH until the cheese has melted.
  • Store leftovers in an airtight container in the refrigerator.
    • Leftovers will keep for 3-4 days.
    • Reheat soup on the stovetop or in the microwave.

What to Serve with Homemade Tomato Soup

This soup received rave reviews at our house. We like to top our bowls of soup with extra cheese, bacon, and crackers. We serve this with grilled cheese sandwiches or a few slices of cheese toast. It is also great with a salad and crusty bread slathered with butter. YUM! Add this soup to your menu. You won’t be disappointed!
