Jambalaya Made with Cauliflower Rice

This Low Carb Jambalaya is a new favorite at our house. My friend, Ally Dorrough, sent me this recipe. While this isn’t an authentic jambalaya recipe, it is an amazing dish! Smoked sausage, cajun seasoning, peppers, onion, diced tomatoes and green chilies, sour cream, cheese, and cauliflower rice. Even if you don’t like cauliflower rice, you will LOVE this dish. You can’t taste the cauliflower at all. It absorbs all of the great flavors in this dish. Give this a try. I promise it will be a hit! Thank you for sharing, Ally!!

How to Make Low Carb Jambalaya

This dish is very easy to make. Start with browning some smoked sausage in a skillet. Add onion, poblano pepper, and sweet bell pepper to the skillet. Sauté until soft. Add garlic, butter, cajun seasoning, salt, and pepper. Add cauliflower rice and cook until softened and slightly browned. Finally, add Rotel, sour cream, and cheese and simmer.

  • I used Conecuh Smoked Sausage. You can see if your store carries it here: https://conecuhsausage.com/pages/store-locations-us.html
  • You can use any brand of smoked sausage or turkey smoked sausage in this dish.
  • Feel free to add chicken or shrimp to the cauliflower rice.
  • I used Monterey Jack cheese. Feel free to use any cheese that you enjoy.
  • Here is our recipe for Homemade Cajun Seasoning: https://www.plainchicken.com/creolecajun-seasoning-secret-recipe/
  • Is Low Carb Jambalaya spicy? There is a little kick in this cauliflower rice. If you are worried about the heat, make sure to use a can of MILD Rotel diced tomatoes and green chiles.

  1. Amazing recipe, thank you so much for sharing this with the world! I stumbled upon your site looking for low-carb recipes, and have been highly impressed!

My hubby’s from New Orleans, he was skeptical about trying jambalaya with cauliflower rice, however it’s delish! We added gulf shrimp, and jalapenos fresh from the garden. This dish is so flavorful, we’ve made it twice in the past week.

    Thanks again!

  2. I just wanted to say that my husband and I love this recipe but I love ALL of your recipes! They are very easy to follow and always taste delicious! 99% of the time when I find a recipe that I want to save it is from Plain Chicken! Thanks for all your wonderful ideas!!
