This Low Carb Jambalaya is a new favorite at our house. My friend Ally Dorrough sent me this recipe. While this isn’t an authentic jambalaya recipe, it is delicious! Smoky sausage, sautéed vegetables, and spicy Cajun seasoning, all brought together in a creamy, cheesy goodness. The smokiness of the sausage blends harmoniously with the heat of the Cajun spices, while the cauliflower rice absorbs all those incredible flavors, providing a satisfying, low-carb base. Plus, that creamy sour cream and Monterey Jack cheese? They take it to a whole new level of indulgence. Whether you’re on a keto diet or just craving some mouthwatering comfort food, this dish will surely become a favorite in your kitchen!
How to Make Low-Carb Jambalaya
This dish is very easy to make with only a few simple ingredients. Heat olive oil in a large skillet or Dutch oven over medium high heat. Add sliced andouille sausage or smoked sausage to the pan and cook until it starts to brown. Add onion, poblano pepper, and sweet bell pepper to the skillet. Sauté until soft. Add garlic, butter, cajun seasoning, salt, and pepper and stir. Add cauliflower rice to the pot and cook until softened and slightly browned. Finally, add Rotel, sour cream, and cheese and simmer. Garnish with fresh parsley or green onions.

- You can omit the cheese if you like.

- Store leftovers in an airtight container in the refrigerator.
- Reheat in the microwave.

Ingredients:
- 1 lb smoked sausage, cut into rounds
- 1 Tbsp olive oil
- 1 large onion, diced
- 1 poblano pepper, diced
- ½ sweet bell pepper, diced
- 1 Tbsp minced garlic
- ¼ cup butter
- 2 tsp cajun seasoning, or to taste
- salt and pepper, to taste
- 1 (20-oz) package frozen cauliflower rice, thawed
- 1 (10-oz) can Rotel diced tomatoes and green chilies undrained
- ½ cup sour cream
- ½ cup shredded Monterey Jack cheese
Instructions:
- In a large skillet over medium-high heat, cook smoked sausage in olive oil.
- Add onion, poblano pepper, and sweet bell pepper to the skillet. Sauté until soft.
- Add garlic, butter, cajun seasoning, salt, and pepper.
- Add cauliflower rice and cook until softened and slightly browned.
- Add Rotel, sour cream, and cheese. Simmer on low for 5 to 10 minutes, stirring occasionally.
