This Low Carb Jambalaya is a new favorite at our house. My friend, Ally Dorrough, sent me this recipe. While this isn’t an authentic jambalaya recipe, it is an amazing dish! Smoked sausage, cajun seasoning, peppers, onion, diced tomatoes and green chilies, sour cream, cheese, and cauliflower rice. Even if you don’t like cauliflower rice, you will LOVE this dish. You can’t taste the cauliflower at all. It absorbs all of the great flavors in this dish. Give this a try. I promise it will be a hit! Thank you for sharing, Ally!!
How to Make Low Carb Jambalaya
This dish is very easy to make. Start with browning some smoked sausage in a skillet. Add onion, poblano pepper, and sweet bell pepper to the skillet. Sauté until soft. Add garlic, butter, cajun seasoning, salt, and pepper. Add cauliflower rice and cook until softened and slightly browned. Finally, add Rotel, sour cream, and cheese and simmer.

- You can use any brand of smoked sausage or turkey smoked sausage in this dish.
- Feel free to add chicken or shrimp to the cauliflower rice.
- I used Monterey Jack cheese. Feel free to use any cheese that you enjoy.

- Is Low Carb Jambalaya spicy? There is a little kick in this cauliflower rice. If you are worried about the heat, make sure to use a can of MILD Rotel diced tomatoes and green chiles.

Ingredients:
- 1 lb smoked sausage, cut into rounds
- 1 Tbsp olive oil
- 1 large onion, diced
- 1 poblano pepper, diced
- ½ sweet bell pepper, diced
- 1 Tbsp minced garlic
- ¼ cup butter
- 2 tsp cajun seasoning, or to taste
- salt and pepper, to taste
- 1 (20-oz) package frozen cauliflower rice, thawed
- 1 (10-oz) can Rotel diced tomatoes and green chilies undrained
- ½ cup sour cream
- ½ cup shredded Monterey Jack cheese
Instructions:
- In a large skillet over medium-high heat, cook smoked sausage in olive oil.
- Add onion, poblano pepper, and sweet bell pepper to the skillet. Sauté until soft.
- Add garlic, butter, cajun seasoning, salt, and pepper.
- Add cauliflower rice and cook until softened and slightly browned.
- Add Rotel, sour cream, and cheese. Simmer on low for 5 to 10 minutes, stirring occasionally.
