These Mexican Sausage Balls are a new favorite at our house. OMG! These are SO good! Sausage, cream cheese, Bisquick, cheddar cheese, taco seasoning, and green chiles. I ate WAY too many of these! I just loved the flavor combination!! These are great for breakfast, lunch, dinner, snacks, and parties! Whip up a batch ASAP! I promise you won’t be disappointed.
How to Make Mexican Sausage Balls
These sausage balls are super simple to make. My secret is to mix all the ingredients in your stand mixer. Put the sausage, cream cheese, cheddar cheese, taco seasoning, green chiles, and Bisquick in the bowl of a KitchenAid mixer fitted with the dough hook attachment and let the mixer do all the work. It will take a few minutes for everything to get incorporated. Make sure to scrape down the bowl if necessary.
Once the mixture is ready, roll into approximately 50 to 60 balls and bake. Be sure not to overbake the sausage balls. Cook them just until they start to brown. Overbaking the sausage balls will make them dry.
- I used Jimmy Dean Hot Sausage.
- You can substitute turkey sausage for the pork sausage.
- Need a gluten-free snack? Use gluten-free Bisquick.
- You can use any shredded cheese that you enjoy. Pepper Jack or a Mexican cheese blend work great.
- Want spicier sausage balls? Add some diced jalepeños.

What to Serve with Sausage Balls
These sausage balls taste great hot out of the oven or at room temperature. I like to serve them with a side of salsa, jalapeno ranch, or some queso. Sometimes I mix together some salsa and ranch dressing for a quick salsa ranch dipping sauce. YUM!

Mexican Sausage Balls
Ingredients:
- 1 (16-oz) package hot pork sausage
- 1 (8-oz) package cream cheese, softened
- 1½ cups Bisquick
- 1 (1-oz) package taco seasoning
- 1 (4-oz) can diced green chiles, undrained
- 1½ cups shredded cheddar cheese
Instructions:
- Preheat oven to 400ºF.
- Mix all ingredients until well combined. (I use my KitchenAid mixer with the dough hook attachment) Roll into 1-inch balls.
- Bake for 18 to 22 minutes, or until brown.
- Sausage balls may be frozen uncooked. If baking frozen, add a few minutes to the baking time.

I made these and they are delicious! I only used 1 cup of Bisquick.
My husband was unsure about taste in regards to the bisquick as he thought it might add some sweetness, but he was wrong now he can’t get enough of them.
This looks amazing but wondering if almond flour be substituted for Bisquick?
