Mexican Quiche Recipe

We LOVE quiche in our house. Chicken Legs is always requesting quiche for lunch or dinner. I was in the mood for tacos the other night and decided to make a Taco Quiche. OMG! SO good! Taco meat, cheese, and salsa are mixed into the quiche mixture. We topped with quiche slices with some sour cream, salsa, and green onions. We went to chow-town on this quiche! YUM!

How to Make Taco Quiche

This quiche is super easy to make with only a few simple ingredients. In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess grease. Add taco seasoning and salsa to the skillet. Cook until the liquid has been absorbed. Spoon taco meat into the bottom of a frozen pie crust. Sprinkle with shredded cheese. In a bowl, stir together eggs, milk, and sour cream. Season with salt and pepper, if desired. Pour the egg mixture over the meat mixture. Bake in a preheated oven until golden brown and the center is set. Allow the quiche to cool for 5 to 10 minutes before using a knife to cut into slices.

Comments

  1. Second time of making this (both times I have leftover taco meat/diced tomato/chopped onion from taco night). The addition of sour cream caught my attention the first time, and the finished dish is why I’m here the second time. Great recipe!

  2. I absolutely LOVE this quiche! I made two of them and was glad I did because we devoured them. It's a good change up to Taco Night too and so easy to put together. I topped mine with a little salsa. There were only a couple pieces leftover, so I can assure it this reheats very well. This recipe is amazing!

  3. Can't wait to try this! Have you ever made it without the pie crust as a crustless quiche? Trying to go low carb. Thanks!

    1. Made this last night as crustless and it was awesome! I only changed it up by using a full pound of sausage instead of ground beef. Will be making this again. Thank you!

  4. We like Mexican quiche too, but make it with chorizo instead of taco meat and Chihuahua cheese. It's so good if you like it a little spicy!

  5. Is the baking time different if you bake from frozen? And I assume no thawing first? It sounds wonderful!

    1. I thaw it overnight in the refrigerator before baking. If you bake it frozen it will take longer. You might also want to cover it for some of the baking time so it doesn't over brown.
