How to Make Cajun Quiche

This recipe is super easy to make with only a few simple ingredients. Prepare the dirty rice mix as directed. Set aside. In a large skillet, cook andouille sausage over medium-high heat until golden brown. 

Place 1 cup of dirty rice and the cooked sausage in the bottom of a deep-dish pie crust. Sprinkle with shredded cheddar cheese and green onions. In a bowl, whisk together eggs, whole milk, and cajun seasoning. Pour the egg mixture over the sausage mixture. Place the quiche on a baking pan and bake in a preheated oven until a toothpick or knife inserted into the middle of the quiche comes out clean or with a few crumbs. Cool for 10 minutes before cutting into slices.

    • To freeze the baked quiche, cool it to room temperature and wrap the pie dish with plastic wrap and aluminum foil. When ready to reheat, thaw and reheat in the oven or microwave before serving.

Ingredients:

  • 1 (8-oz) box Zatarain’s Dirty Rice plus water called for on the package
  • 1 (9-inch) deep dish frozen pie crust
  • -lb andouille sausage or smoked sausage
  • ¼ cup sliced green onions
  • ¾ cup shredded cheddar cheese
  • 5 large eggs
  • cup milk
  • ½ tsp cajun seasoning

Instructions:

  • Preheat oven to 350ºF.

  1. I made this last night & it was very good. My husband ate over half the quiche himself 🙂 But I do have a couple of questions. I sliced the sausage into then slices, is this correct or should have cut the slices in half? Second question is about the rice. The box said to add hamburger meat to it. I didn’t but wanted to make sure we just fix the box with water only. Thank you for all of your yummy recipes. When I am looking for a new recipe, I always come here to find something new!

    1. It is up to you how to cut the sausage – slices, slices cut in half, or diced is all fine. For the rice, I didn’t add any meat to it. I just used the water called for on the box.
