Easy Oven Roasted Potatoes

I served these potatoes with our Honey Lime Chicken.  I am not a huge potato fan, but I really liked these.   I like my potatoes crispy, so I made sure to slice them really thin.  This was a really simple side dish and I am already planning on making it again.  There are so many flavors that could be used on these potatoes.  I think I might so southwestern next time.  Maybe even add some BBQ and bacon on top of them!



Easy Oven Roasted Potatoes
(Printable Recipe)

2 large potatoes, scrubbed
3 Tbsp olive oil
1 Tbsp Italian Seasoning
1 tsp salt
4 Tbsp Parmesan cheese

Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat.  Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown.  Top with Parmesan cheese and bake an additional 5 minutes.

I do a roasted potato with similar ingredients but do my potatoes just quartered. I like the idea of doing them thin sliced like this, almost like thick potato chips. I think the kids would love this. You rock Steph!

Your oven roasted potatoes looks really good. Slicing them thin really does help to make the potatoes crispy.

I saw these on pinterest and just had to look, these sound yummy and very similar to a recipe I grew up with. My version also uses sliced potatoes, but after that they get a light cross-hatch pattern with a pairing knife (not sure why, mom never explained), then are brushed with melted butter and sprinkled with seasoning salt before baking. So yummy, but will have to try the Italian seasoning next time. Thank you for sharing.
