These Oven Roasted Potatoes are a staple at our house. They are super easy to make and taste great! Crispy sliced potatoes seasoned with Italian seasoning and parmesan cheese. They are crispy on the outside and soft on the inside. This is a great side dish for a hectic weeknight or dinner party. Whip up a batch ASAP!

Easy Oven Roasted Potatoes

These potatoes are super easy to make with only a few simple ingredients. Rinse and scrub potatoes. Using a knife or mandoline slicer, slice potatoes into thin slices. Place potato slices in a ziplock bag or large bowl. Drizzle potatoes with olive oil. Add Italian seasoning, salt, and black pepper to the oil mixture. Toss the potatoes to coat in the oil and spices. 

Line a large rimmed baking sheet with aluminum foil or parchment paper and spray with cooking spray. Place potatoes in a single layer on the baking pan. Bake for 20 minutes, or until lightly brown. Sprinkle potatoes with grated parmesan cheese. Bake for an additional 5 minutes.

  • I used russet potatoes. Russet potatoes are also referred to as baking potatoes.
    • You can use any type of potatoes that you prefer – Yukon gold potatoes or red potatoes are both good.
  • Feel free to mix up the herbs on the potatoes. Garlic powder, paprika, taco seasoning, cumin, anything goes.
  • Cooking time may vary depending on how thick your potato slices are. 
  • Store leftovers in an airtight container in the refrigerator.
    • Reheat in the oven or air fryer.

  • Preheat oven to 450ºF. Line a rimmed baking sheet with foil.
  • Slice potatoes into very thin slices (¼ inch). Put potato slices in a gallon ziplock bag.
  • Pour olive oil, Italian seasoning and salt in ziplock bag and toss to coat potatoes.
  • Place potatoes in a single layer on prepared baking sheet.
  • Bake for 20 minutes, or until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.

  4. Great recipe! I made this for dinner along with some baked chicken breasts, so I ended up baking the potatoes for 30 minutes on 425. Next time I make this recipe, I'll grease the pan with a little more olive oil; some of the potatoes stuck to the pan.

  5. 450 is much too hot for this if slice "really thin" as stated. They maxed out at about 10-12 minutes. Delicious otherwise.

  6. I make potatoes like this fairly often. Cabela's makes a Beer & Garlic flavoring mix that is amazing on these!

  7. I saw these on pinterest and just had to look, these sound yummy and very similar to a recipe I grew up with. My version also uses sliced potatoes, but after that they get a light cross-hatch pattern with a pairing knife (not sure why, mom never explained), then are brushed with melted butter and sprinkled with seasoning salt before baking. So yummy, but will have to try the Italian seasoning next time. Thank you for sharing.

  9. I do a roasted potato with similar ingredients but do my potatoes just quartered. I like the idea of doing them thin sliced like this, almost like thick potato chips. I think the kids would love this. You rock Steph!
