White Cheddar & Squash Casserole

White Cheddar & Squash Casserole Recipe - squash tossed in a white cheddar cheese sauce and baked - like macaroni and cheese without noodles. Even squash haters will love this easy casserole! Can make ahead for entertaining.

This White Cheddar and Squash Casserole is like a macaroni and cheese casserole with squash instead of noodles.  It is SO good! It will make squash haters change their mind! The best part is this casserole can be made ahead of time and baked later for entertaining. Perfect for a Memorial Day cookout!

This casserole took about 20 minutes to assemble. The squash and onions are sautéed until they are tender. Once the squash is done, a quick cheese sauce is made and tossed with the squash. Finally, pop it in the oven and you have a cheesy and delicious veggie side dish. We served this with some grilled chicken and Fried Okra. YUM!

  • 1 medium onion, chopped
  • 3 lb yellow squash, sliced
  • 2 tsp salt, divided
  • 3/4 tsp pepper
  • 2 Tbsp flour
  • 1 1/2 cups milk
  • 2 cups white cheddar cheese, shredded

  1. Do you think this would work mixing some squash and some zucchini? (planning for zucchini overload towards summer end!!)

  3. So tired of the same vegetables, I decided to give this a try and serve it along side some grilled chicken. This dish makes a few dishes, but totally worth it!! So cheesy and delicious. My kids loved it too which is a huge bonus. I wasn't sure how they would feel about squash. But then again, you could cover just about anything in a cheese sauce and it'd be awesome. Love, love, LOVE this recipe!
