Pin This RecipeThis Cheesy Potato Casserole is a new favorite in our house. It is different from our usual potato casseroles in that the recipe uses cans of Cream of Potato soup instead of Cream of Chicken or Mushroom. It really bumps up the potato flavor!!!
My favorite thing about this Cheesy Potato Casserole is all the CHEESE! I used three types of cheese – cheddar, parmesan and swiss. If you aren’t a fan of any of these cheeses, feel free to swap out your favorite. I really loved the combination of cheddar, parmesan and swiss. I could have made a meal out of these yummy potatoes!!
These potatoes are great with just about anything. Chicken, pork, beef, grilled meat, baked meat – you name it! You can even make this ahead of time and FREEZE for later!! WooHoo! I actually split the potato mixture between a couple of foil pans. Cover the pans with plastic wrap and foil before popping in the freezer. When you are ready to bake the potatoes, let them thaw in the fridge before baking. I LOVE having an easy and delicious side dish ready and waiting!

Cheesy Potato Casserole
Ingredients:
- 1 (32-oz) bag frozen shredded hash browns
- 2 (10.5-oz) cans Cream of Potato soup
- 1 cup sour cream
- 1 tsp garlic powder
- ½ tsp pepper
- 2 cups shredded cheddar cheese
- 1 cup grated Parmesan cheese
- ½ cup shredded Swiss cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9x13x2-inch pan with cooking spray.
- In a large bowl, combine the soup, sour cream, garlic powder and pepper. Stir in cheese and hash browns.
- Spread potato mixture into prepared pan.
- Bake uncovered for 55 to 60 minutes.
