Breakfast Bundt Cake
Ingredients:
- 1 lb breakfast sausage
- 2 (6-oz) cans refrigerated biscuits, cubed
- 2 cups frozen tater tots
- 12 large eggs
- ⅓ cup milk
- 1 Tbsp dijon mustard
- ½ tsp onion powder
- ½ tsp garlic powder
- salt and pepper, to taste
- 2 cups shredded cheddar cheese
Instructions:
- Preheat oven to 400ºF. Generously spray a Bundt cake pan with baking spray with flour. Set aside.
- In a large skillet, cook sausage over medium-high heat until crumbled and no longer pink. Drain excess grease.
- In a large bowl, whisk together egg, milk, mustard, onion powder, garlic powder, salt, and black pepper.
- Add cooked sausage, tater tots, chopped biscuit dough, and shredded cheese. Stir to combine.
- Pour the egg mixture into the prepared pan.
- Bake, uncovered, for 45 to 55 minutes, until golden brown and the eggs are set.
- Cool in the pan for 5 to 10 minutes. Invert the casserole onto a serving platter.

I served 2 of these for our monthly church breakfast this morning and everyone loved it! Unfortunately we have a convection oven and the top got browned before the center was fully cooked. Next time I will use a lower heat setting and cook it longer. One of the cakes had to be put in the microwave for a few minutes to form up the center.
I think that the next time I make it I will use half as many tater tots and only one 6oz roll of biscuits.
I made one with cheese and it made the finished product a little dry.
I served these with Libby’s sausage gravy, fresh fruit, and an apple pound cake.

When using a convection oven, reduce the cooking temperature by 25 degrees F and reduce the cooking time by 25 percent.
Going to try this recipe looks amazing. I have two cans of the smaller biscuits each have 10 do I use them both or just one can cubed?
You would use 16 of those biscuits to equal 12-oz. I think if you use all 20 biscuits, it would be too much.
This was delicious! I added onion and green pepper, had a cherry salsa on the side for a dip of sweetness. Served with blueberry muffins and fresh fruit for supper.
Can you hash browns instead of tater tots?

Do you leave the tater tots frozen or thaw first? I have done them frozen and they didn’t seem to cook all the way in one recipe I tried and thawed them for another recipe and they came apart when I stirred it up.
I use them frozen, but you can thaw them if you prefer
Made a recipe that used cubed bread, fabulous! Everything else is the same. Made 3 for a community breakfast with 3 quiches and several asked for recipe. Definitely going to try the biscuits in it the next time.
