Even though this is called Cracked Out Crescent Breakfast Casserole, we actually love this mainly for lunch or dinner. I’m not big on making breakfast. We usually eat cereal or toast and save all the casseroles for later in the day. This one is a favorite. Crescent rolls filled with cheddar, bacon, and ranch and baked in a creamy egg mixture. YUM! My favorite flavor combination!
How to Make Crescent Breakfast Casserole
This casserole is very easy to make. Start with making the filling with cream cheese, ranch dressing mix, cooked bacon, and cheddar cheese. Cut crescent rolls in half, scoop cream cheese mixture on top and roll up. Place the crescent rolls in a baking dish and top with a combination of eggs and milk. Pop it in the oven and bake.
Here are a few tips to make assembling this casserole a breeze:
- I used precooked bacon for this recipe. Precooked bacon is a GREAT shortcut!
- One cup of precooked chopped bacon equivalent to about one pound of bacon.
- Use a pizza cutter to cut each crescent roll into two triangles.
- Use a small cookie scoop to portion out filling on top of crescent rolls.
Can Crescent Breakfast be Made in Advance?
You can make this casserole in advance and refrigerate it overnight. You can make the filling a day or two ahead of time and keep it refrigerated until you are ready to assemble it. If you want to freeze this casserole, I suggest baking it first and reheating it when you are ready to serve. To reheat after freezing, thaw completely and bake covered at 350ºF for 30 to 40 minutes.

Cracked Out Crescent Breakfast Casserole
Equipment:
Ingredients:
- 1 (8-oz) package cream cheese, softened
- 1 (1-oz) packet ranch dressing mix
- 1¼ cups cooked and chopped bacon
- 2 (8-count) tubes refrigerated crescent rolls
- 5 eggs
- 1½ cups milk
- 2 cups shredded cheddar cheese
- salt and pepper, to taste
Instructions:
- Preheat oven to 375ºF. Lightly spray a 9×13-inch baking pan with cooking spray.
- Combine cooked bacon, cream cheese, ranch packet, and 1 cup cheddar cheese.
- Unroll both cans of crescent rolls; separate into 16 triangles. Cut each triangle lengthwise into 2 narrow triangles.
- Scoop a heaping tablespoon of the bacon and cream cheese mixture on the wide side of each triangle. Roll up and place in prepared pan. Repeat with remaining triangles.
- Top crescent rolls with remaining 1 cup shredded cheese.
- Whisk together eggs, milk, salt, and pepper. Pour over cheese and crescents.
- Bake for 30 to 40 minutes until the egg mixture is set.

Two questions: instead of cutting each crescent in half, can I just use the whole crescent & roll it up with the ingredients?
