Cheesy Baked Green Beans with Cheddar, Bacon & Ranch

These Cracked Out Green Beans are a new favorite at our house. They are low in carbs and high in taste! I whipped these up with some grilled chicken last week and everyone gobbled them up! Fresh green beans, mayonnaise, cheddar cheese, ranch dressing mix, and bacon. I could honestly make a meal out of just these beans. This is super simple to make and tastes great! Plus it is ready to eat in under 30 minutes. You can’t beat that.

What does CRACK mean?

If a recipe has crack in the title it means that it has cheddar, bacon, and ranch in the recipe. It all started with my Crack Dip way back in 2007. I made the dip for a Titans football game. Everyone went crazy over it. We couldn’t stop eating it and said it was like crack. The name stuck. The flavor combination is amazing. These green beans are no exception.

How to Make Cracked Out Green Beans

This side dish is effortless to make with only five simple ingredients. In a large skillet, cook bacon strips until crispy over medium heat. Remove the bacon from the skillet and drain bacon grease on paper towels. Chop the bacon and set it aside. 

Trim green beans and place in a baking pan. In a small bowl, stir together mayonnaise and ranch dressing mix. Spread the mayonnaise mixture over the green beans. Sprinkle shredded cheddar cheese and chopped bacon over the green beans. Bake until crisp-tender.

  • Preheat oven to 350ºF.
  • Place green beans in a lightly greased 9x13x2-inch baking dish.
  • In a small bowl, combine mayonnaise and ranch dressing mix. Spread mayonnaise mixture over green beans.
  • Sprinkle cheddar cheese and bacon over mayonnaise.
  • Bake, uncovered, for 25 to 30 minutes.

  1. Oddly we prefer canned green beans…. could you substitute those for fresh and how many cans and any adjustments to the recipe???

    1. I haven’t tested this recipe with canned green beans, so I can not say. My guess is you need about 4 cans of beans.
