Chicken, Cheddar, Bacon & Ranch

Back in the day, Bisquick Impossible Pies were all the rage. I love the Impossible Taco Pie. We make it all the time. Since I had a big box of Bisquick in the pantry, I decided to play around with the recipe. This Impossible Crack Chicken Pie is the first experiment. Chicken, cheddar, bacon, and ranch – YUM! It has quickly become one of our favorite weeknight meals!

What is an Impossible Pie?

The Bisquick Impossible Pie or Impossibly Easy Pie is basically a quiche. There is no pie crust. The Bisquick baking mix is mixed in with the eggs and milk and makes the crust with the filling. They are very easy to make! For this Impossible Crack Chicken Pie, start with combining cooked chicken, cooked bacon, cheddar cheese, and ranch dressing. Place the mixture into the bottom of a pie plate or quiche pan. Next whisk together Bisquick, eggs, and milk. Pour the batter on top of the chicken mixture and bake. Easy Peasy!

Feel free to add some chopped broccoli, mixed veggies, onions, or mushrooms to the meat mixture. This is a great recipe to sneak some veggies into.

What to Serve with Chicken Pie

Equipment:

Ingredients:

  • 2 cups chopped cooked chicken
  • cup chopped cooked bacon
  • ½ cup bottled ranch dressing
  • 1 cup shredded cheddar cheese
  • ½ cup Bisquick
  • 1 cup milk
  • 2 eggs

Instructions:

  • Preheat oven to 400ºF. Grease 9-inch deep dish pie plate.
  • Combine cooked chicken, bacon, ½ cup cheese, and ranch dressing. Spread into the bottom of a pie plate.
  • Stir Bisquick, milk, and eggs until blended. Pour into pie plate.
  • Bake for about 25 minutes, sprinkle with remaining cheese.
  • Bake an additional 3-5 minutes, until cheese is melted.

    1. What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

  1. We don’t have Bisquick here in Australia. Can I make it without the bisquick or is there a way of making bisquick that would work .

    1. 1 cup all-purpose flour
      1 ½ teaspoons baking powder
      ¼ teaspoon salt
      1 tablespoon butter
      Sift flour into a bowl; add baking powder and salt and whisk until fully incorporated. Cut butter into flour mixture using a pastry cutter until evenly combined. (This will make more than you need…you could do half of this. I used this recipe when I lived in Australia!)

  2. I haven’t tried this yet but plan on making soon as it looks and sounds delicious. I just have one question before I go to the store for ingredients. Do you use Bisquick biscuit mix or Bisquick pancake and baking mix? Thanks.
