Back in the day, Bisquick Impossible Pies were all the rage. I love the Impossible Taco Pie. We make it all the time. Since I had a big box of Bisquick in the pantry, I decided to play around with the recipe. This Impossible Crack Chicken Pie is the first experiment. Chicken, cheddar, bacon, and ranch – YUM!
The Bisquick Impossible Pie or Impossibly Easy Pie is basically a quiche. There are no pie crusts. The Bisquick baking mix is mixed in with the eggs and milk to make the crust. It bakes along with the filling. This has quickly become one of our favorite weeknight meals!
What is Bisquick?
Bisquick is a pre-made baking mix sold by Betty Crocker. It is made with flour, shortening, salt, sugar, and baking powder.
If you don’t have access to a box of Bisquick, you can make a quick homemade Bisquick mix.
In a food processor pulse 1 cup of all-purpose flour, 1 1⁄2 teaspoons of baking powder, 1⁄2 teaspoon of salt, and 2 1⁄2 tablespoons Crisco shortening. If you don’t have a food processor, you can use a pastry cutter to cut the shortening into the flour mixture.
What is an Impossible Pie?
This chicken pie is very easy to make with only a few simple ingredients! In a large skillet over medium heat, cook bacon until crispy. In a medium bowl, stir together cooked chicken, cooked bacon, shredded cheddar cheese, and ranch dressing. Season with salt and black pepper, if desired. Spread chicken mixture into the bottom of a pie plate or quiche pan. In a large bowl, whisk together Bisquick, eggs, and milk or cream. Pour the batter on top of the chicken mixture and bake until golden brown. Garnish the pie with fresh parsley. Let the pie rest for 5 minutes before cutting slices with a knife.
Helpful Tips & Frequently Asked Questions
- I use rotisserie chicken for the cooked chicken in this pie. You can use any cooked chicken you have on hand. Chicken breasts, chicken thighs, chicken tenders all work fine.

- Can substitute turkey and turkey bacon.
- Can use gluten-free Bisquick for a gluten-free recipe.
- Feel free to add some fresh herbs and vegetables to the chicken mixture. Chopped broccoli, peas, celery, mixed veggies, carrots, onions, or mushrooms are all great. Turns this into a cheddar, bacon, and ranch chicken pot pie recipe.
- Store leftovers in an airtight container or covered in plastic wrap in the refrigerator.
What to Serve with Chicken Pie

Impossible Crack Chicken Pie
Equipment:
Ingredients:
- 2 cups chopped cooked chicken
- ⅓ cup chopped cooked bacon
- ½ cup bottled ranch dressing
- 1 cup shredded cheddar cheese
- ½ cup Bisquick
- 1 cup milk
- 2 eggs
Instructions:
- Preheat oven to 400ºF. Grease 9-inch deep dish pie plate.
- Combine cooked chicken, bacon, ½ cup cheese, and ranch dressing. Spread into the bottom of a pie plate.
- Stir Bisquick, milk, and eggs until blended. Pour into pie plate.
- Bake for about 25 minutes, sprinkle with remaining cheese.
- Bake an additional 3-5 minutes, until cheese is melted.

If I double the recipe and make in a 9×13, about how long should it bake?
I’m not sure. I’ve never doubled it. I would check it at the time listed and see if it needs more time.

Can you use non-dairy milk? I use almond milk all the time so I wasn’t sure if the milk fat is needed.

Made this for my client and I and we give it a thumbs up. Although I was thinking of wouldve been more breadier than it came out. Still very delicious. Let it set before serving it’s better that way. I used chicken breasts seasoned with red and green bell pepper and onion. And seasoned my bisquick mix. Super delicious. Thank you so much. 😊

My husband bought ranch dressing mix instead of the bottle. Can I still use it?

What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.
We don’t have Bisquick here in Australia. Can I make it without the bisquick or is there a way of making bisquick that would work .
1 cup all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
1 tablespoon butter
Sift flour into a bowl; add baking powder and salt and whisk until fully incorporated. Cut butter into flour mixture using a pastry cutter until evenly combined. (This will make more than you need…you could do half of this. I used this recipe when I lived in Australia!)
I haven’t tried this yet but plan on making soon as it looks and sounds delicious. I just have one question before I go to the store for ingredients. Do you use Bisquick biscuit mix or Bisquick pancake and baking mix? Thanks.
