We love to whip up a batch on Sunday and eat the leftovers for breakfast during the week. They make a great grab-and-go breakfast! Kids and adults love them!
How to Make Mini Pancake Bites
These muffins are super simple to make with only a few ingredients. In a medium bowl, combine all-purpose flour, baking powder, baking soda, salt, and sugar. In another bowl, whisk together buttermilk, eggs, maple syrup, and melted butter. Add the dry ingredients to the bowl and stir just until combined. Stir in the chocolate chips. Spray a mini muffin pan with cooking spray. Scoop pancake batter into the mini muffin tin. Bake for 10 to 13 minutes, or until a toothpick inserted in the center of the pancake bites comes out clean.
- I used chocolate chips in the muffins.
- What other mix-ins can I use in these pancake bites? Blueberries, pecans (or any nut), strawberries, raspberries, sausage, bacon, or coconut are all delicious. You can also sprinkle the tops of the muffins with some cinnamon sugar before baking.
- To make homemade buttermilk, combine 1 cup of milk with 1 Tbsp of white vinegar or lemon juice. Let stand for 5 minutes or until the milk starts to curdle.
- This recipe uses real maple syrup, not pancake syrup.
- Can Pancake Bites be made in advance? Yes! Bake the muffins and let them cool completely. Store the muffins in an airtight container in the fridge. Pop a few in the microwave before serving.
- Can Pancake Muffins be frozen? Yes! Bake the muffins and let them cool completely. Place the muffins in a freezer bag and freeze. To reheat, thaw and reheat in the microwave or covered in aluminum foil in the oven.
What to Serve with Chocolate Chip Pancake Muffins
These muffins have been on repeat at our house. They are super easy to make from scratch. This recipe is just as easy as using a box pancake mix, but they taste 100 times better! We like to serve these with warm maple syrup, eggs, and bacon. They also go great with your favorite breakfast casserole! You must whip up a batch ASAP!

Equipment:
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 Tbsp sugar
- ⅔ cup buttermilk
- 1 large egg
- 2 Tbsp pure maple syrup
- 2 Tbsp melted butter
- ½ cup chocolate chips
Instructions:
- Preheat oven to 350ºF. Lightly spray a mini muffin pan with cooking spray. Set aside.
- Combine flour, baking powder, baking soda, salt and sugar in a medium bowl.
- In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
- Add wet ingredients to dry ingredients and stir with a spoon until combined.
- Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
- Scoop pancake batter into mini muffin pan.
- Bake for 10 to 13 minutes, until a toothpick inserted in the center of the pancake bites comes out clean
