Pulled Pork Stuffed Cornbread Muffins

These Pulled Pork Cornbread Bites were the star of our football party last week.  Next time I make these I am going to double the recipe. Everyone gobbled them up. Sweet cornbread muffins stuffed with smoky barbecue pulled pork and cheese. O-M-YUM! They are super simple to make and ready to eat in about 15 minutes. These muffins are great for lunch, dinner, or parties. Whip up a batch this weekend. They are sure to be a hit!

How to Make Pulled Pork Cornbread Muffins

These cornbread muffins are super easy to make with only a few simple ingredients. In a medium bowl, whisk together Jiffy cornbread mix, eggs, mayonnaise, and melted butter. Stir in shredded cheddar cheese. Spray mini muffin pans with nonstick cooking spray. Scoop batter into the muffin tin. In a separate large bowl, toss pulled pork with your favorite barbecue sauce. Spoon bbq pork mixture into the center of the batter and press down. Sprinkle with shredded cheese. Bake in a preheated oven until golden brown and a toothpick inserted into the muffin comes out clean and tops of the muffins spring back when touched.

  • I use a box of regular Jiffy corn muffin mix. This recipe is equally delicious with Jiffy Honey Corn Muffin Mix.
  • Can use store-bought or homemade barbecue pulled pork.
  • I make the muffins in a mini muffin tin. You can make the muffins in a regular muffin tin.
    • You will need to increase the cooking time if using a regular muffin pan.
  • For an extra kick, add a tablespoon or two of diced jalapeños to the cornbread mixture.

Pulled Pork Cornbread Muffins – sweet cornbread muffins stuffed with smoky bbq pulled pork and cheese. SO good! I took these to a party and they were gone in a flash. Jiffy mix, eggs, butter, mayonnaise, bbq pulled pork, cheddar cheese. Ready to eat in 15 minutes. Great for parties and a quick lunch or dinner.

Ingredients:

  • 1 (8.5-oz) box Jiffy Mix cornbread
  • 2 large eggs
  • ½ cup mayonnaise
  • ¼ cup unsalted butter, melted
  • 1 lb barbecue pulled pork
  • cups shredded cheddar cheese, divided

Instructions:

  • Preheat oven to 400ºF. Spray mini muffin tins with nonstick spray. Set aside.
  • In a bowl, stir together Jiffy mix, eggs, mayonnaise, and melted butter. Stir in 1 cup shredded cheese.
  • Scoop cornbread batter into 36 mini muffin cups.
  • Spoon pulled pork into the center of the batter of each muffin cup and press down.
  • Sprinkle muffins with shredded cheddar cheese.
  • Bake for 15 minutes, until golden brown.
