This recipe is from Plain Chicken reader, Cheryl Ener. This is her husband’s grandmother’s chicken casserole recipe. Cheryl emailed me this recipe back in June, and I am just now posting it (slacker – I know).
I don’t have a really good traditional chicken casserole recipe, so I was anxious to try this one out. I used rotisserie chicken and this came together in minutes and has tons of great flavor. It was the perfect weeknight meal! We both really enjoyed this casserole. We now know why it is called “Yum Yum Chicken” – YUM! Thank you so much for sharing this treasured family recipe, Cheryl!
How to Make Yum Yum Chicken Casserole
This casserole is effortless to make with only a few simple ingredients. Chop cooked chicken and spread it on the bottom of a 9×13-inch casserole dish. In a large bowl, stir together cream of chicken soup, cream of celery soup, and sour cream. Season with salt and black pepper, if desired. Spread the sauce over the chicken. Sprinkle a bag of stuffing mix over the soup mixture. Drizzle chicken broth and melted butter over the stuffing. Bake in a preheated oven until bubbly. Garnish casserole with parsley.

- When ready to eat, thaw and bake as directed.

Yum Yum Chicken
Equipment:
Ingredients:
- 1½ lb chopped cooked chicken
- 1 cup sour cream
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
- 1 (10.5-oz) can Cream of Celery soup
- 1 (6-oz) box cornbread stuffing, uncooked (Stove Top or Pepperidge Farm)
- 1 cup chicken broth
- 4 Tbsp melted butter
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
- Spread chicken in the bottom of the dish. In a separate bowl, mix together the cream of chicken soup, cream of celery soup and sour cream. Spread over the chicken.
- Sprinkle the uncooked stuffing over the soup mixture, (note: if herb packet is not mixed with stuffing mixture, top stuffing with herb packet). Mix together the broth and the melted butter and pour evenly over all.
- Bake, uncovered, for 30 minutes.
Notes:
- I use a rotisserie chicken for the chopped cooked chicken in this dish.

For the cream of cheicken and cream of celery, is it the small cans or large cans?

My 9 year old said this chicken is self explanatory (yum, yum). He is our toughest critic. If you can win him over, you know it is a hit. BTW, I followed this exactly.
Could you use cream cheese instead of sour cream?
I just had to come and say thank you for such an awesome recipe… I added sauteed onions and broccoli to the soup mixture, and oh my goodness… I had to step away from the table, otherwise I probably could have eaten most of it by myself.. That would not have been a good idea.. It is seriously that good.. Yum Yum Chicken is right…
I used boneless skinless chicken breast (baked & cubed) & had cream of chicken with herbs, & I used cream of mushroom roasted garlic instead of cream of celery, & I mixed in a packet of onion soup mix with the soups & sour cream, also added the Swiss cheese as suggested in previous comments. I made this recipe just as it said. The flavor was GREAT, but my stuffing did not get puffy and moist like it showed in the photos. Any ideas? Thanks!

OMG, this was amazing! So far all three recipes I have tried from this blog I have loved!
I did make a few revisions to the recipe as written:
1-I added a bit of Swiss cheese over the chicken, as suggested in the comments.
2-I sautéed carrots, celery and onion that I chopped in the food processor, then added it to the sour cream mixture. (I used reduced fat sour cream).
3-I added 1/2 tsp sage, salt and pepper to the sour cream mixture.
4-I used the pepperidge farm cornbread stuffing mix and poured the margarine/chicken broth mixture into the stuffing mix before sprinkling it over the casserole…next time I am only going to use half the bag though because I thought it had too much and it'll help make it lower calorie:)
