Easy Chicken Casserole with Stuffing Mix

This recipe is from Plain Chicken reader, Cheryl Ener. This is her husband’s grandmother’s chicken casserole recipe. Cheryl emailed me this recipe back in June, and I am just now posting it (slacker – I know).

I don’t have a really good traditional chicken casserole recipe, so I was anxious to try this one out. I used rotisserie chicken and this came together in minutes and has tons of great flavor. It was the perfect weeknight meal! We both really enjoyed this casserole. We now know why it is called “Yum Yum Chicken” – YUM! Thank you so much for sharing this treasured family recipe, Cheryl!

How to Make Yum Yum Chicken Casserole

This casserole is effortless to make with only a few simple ingredients. Chop cooked chicken and spread it on the bottom of a 9×13-inch casserole dish. In a large bowl, stir together cream of chicken soup, cream of celery soup, and sour cream. Season with salt and black pepper, if desired. Spread the sauce over the chicken. Sprinkle a bag of stuffing mix over the soup mixture. Drizzle chicken broth and melted butter over the stuffing. Bake in a preheated oven until bubbly. Garnish casserole with parsley.

  • I use rotisserie chicken. You can use any cooked chicken you have on hand. Chicken breasts, chicken thighs, chicken tenderloins, or canned chicken.
  • What can I add to the chicken mixture?

    • green peas
  • You can use any flavor of cream of condensed soup. Cream of Chicken soup, cream of mushroom soup, or cream of celery soup.
  • I use stovetop stuffing mix. You can use any flavor you prefer.
  • Can Yum Yum Chicken be frozen? Yes! Assemble the casserole and cover the dish with plastic wrap and aluminum foil. Place in the freezer for up to 3 months.
    • When ready to eat, thaw and bake as directed.
  • Store leftovers in an airtight container in the refrigerator.

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Spread chicken in the bottom of the dish. In a separate bowl, mix together the cream of chicken soup, cream of celery soup and sour cream. Spread over the chicken.
  • Sprinkle the uncooked stuffing over the soup mixture, (note: if herb packet is not mixed with stuffing mixture, top stuffing with herb packet). Mix together the broth and the melted butter and pour evenly over all.
  • Bake, uncovered, for 30 minutes.

  1. Would you be able to put this dish together the night before and pop in the oven the next morning? If so, how long would you cook it for? And would you assemble the whole dish or wait to add the stuffing mix in the morning.

    1. I’d probably add the stuffing mix right before I bake it. You will need to add 10 to 15 minutes to the cooking time if baking this cold straight from the oven.

  2. This is very tasty. I added some frozen corn, carrot, Lima bean frozen veggies. Great recipe. I seasoned the rotisserie chicken with salt, pepper and a little onion powder too.

  3. I’ve been cooking this since I was a babysitter years ago. My fam has always loved it. We use regular stuffing with the butter and chicken broth mixed and on top. Both are very delicious.

  6. I just tried to make this. Step by step of the directions and my chicken was still raw after 30 minutes. Has anyone else had this issue? I’m not giving up cuz that was what we had planned for dinner. I just hate when stuff like this happens. 😞

  7. This is a good basic recipe, felt it was a little to plain though yummy. I added chopped onions and celery, a little poultry seasoning and pepper also cut the sour cream in half. It’s a well with making the family loved it. Tasted like Thanksgiving!😊

  8. This recipe is so delicious, I also tweaked it a little bit. I added onion, mixed veggies and used turkey instead and it is one our favorites.
