Can top the roasted potatoes with cheese and ranch. YUM! Great with chicken, hot dogs, hamburgers, or grilled pork. These have been on repeat at our house.

Roasted Potatoes Tossed in Buffalo Sauce

I found this recipe for Buffalo Potato Wedges in an old cookbook and thought it sounded interesting. Kind of like hot wings but with potatoes. These potatoes are a new favorite at our house. We have been making these weekly and just can’t get enough of them. I always have the ingredients on hand to whip up a batch. They are super simple to make and taste great! Such a delicious change to our usual baked potato or potato casserole.

How to Roast Potato Wedges

These roasted potatoes are super easy to make. Start by washing the potatoes and cutting them into bite-sized cubes. Toss the potatoes in some oil and season with salt, pepper, and garlic powder. Place the potatoes on a rimmed baking sheet or baking dish. Pop the pan in the oven and cook until the potatoes are soft. Finally, ttoss the potatoes in hot sauce and butter and serve.

I used Frank’s Red Hot Sauce. You can use the regular hot sauce or the wing sauce. Either will be just fine. Another good brand of hot sauce is Crystals.

What to Serve with Buffalo Potato Wedges

We topped the potato wedges with some parsley, cheddar cheese, and ranch dressing. They are the perfect side dish for grilled chicken, pork, or burgers. Heck, these are good just as an appetizer! Buffalo potatoes topped with cheese, ranch, and bacon? O-M-YUM! Perfect for watching football this Fall.

Buffalo Potato Wedges – a great side dish or an easy appetizer. Super easy to make with only a few simple ingredients. Potatoes, oil, salt, pepper, hot sauce, and butter. Can top the roasted potatoes with cheese and ranch. YUM! Great with chicken, hot dogs, hamburgers, or grilled pork. These have been on repeat at our house.

Ingredients:

  • 6 to 8 potatoes, washed and cut into 1-inch wedges
  • 2 Tbsp olive oil
  • salt, pepper, and garlic powder, to taste
  • 1/4 cup butter, melted
  • 1/2 cup hot pepper sauce

Instructions:

  • Preheat oven to 375ºF.
  • Toss potato wedges in oil and season with salt, pepper, and garlic powder. Place on a rimmed baking sheet.
  • Bake for 45 minutes, until tender.
  • Combine butter and hot sauce in a microwave-safe cup. Microwave on high until butter is melted; stir to combine. Drizzle butter mixture over potato wedges and toss.

Notes:

I used russet potatoes. Can use any type of potato you prefer – red or Yukon gold.
I use Frank’s Hot Sauce or Frank’s Wing Sauce.

  1. These were amazing. I could have eaten the whole tray. I added the buffalo/butter with about 5 minutes left to bake and then put some shredded cheddar cheese on top. Cheese was gooey and then drizzled the ranch on top. Whole family loved them!
